The Queens, also said fall down the mafaldine, are noodles embellished with scalloped edges, typical of Neapolitan tradition. They were created in honor of the birth of the little princess Mafalda of Savoy in the 1902, from which they take their name. They are an excellent format for pasta all norma and for baked pasta.

We only use Russello wheat semolina, for the semolina pasta, or whole wheat semolina Timilia, for wholemeal pasta, because they are rich in nutrients, GMO-free and with an easily digestible gluten.
Our pasta is bronze drawn and slowly dried, at low temperatures, to preserve all the nutritional characteristics.
